Description: Love brisket? Love burgers? You’re in for a treat! These little patties of beefy goodness are juicy, smoky, and packed full of rich flavour. Cattle Call and Black Angus take centre stage. Get ready for a savoury delight that’s sure to impress.
Ingredients:
- 1 KG brisket
- 1 TBSP Cattle Call
- Black Angus to taste
- 1 head of lettuce
- 1 onion
- 2 large tomatoes
- 1 TBSP worcestershire sauce
- colby or montery jack cheese
Method:
- Prepare your smoker and get to temp at 250F/120C.
- Cut the point and flat off your brisket. Remove any hard fat. Cut into strips to prepare for your meat grinder. We recommend a double coarse grind for good consistency. Alternatively, you can ask your butcher to prepare as stated.
- In a bowl, mix the minced brisket, Cattle Call and worcestershire sauce.
- Form into 150-200g patties.
- Season to taste with Black Angus.
- Smoke briskets until medium rare (140F/60C). Roughly 30-45 minutes.
- Top with a generous amount of cheese and let rest.
- Build your burger as you like but remember in order: bun, condiments, patty, cheese, toppings, bun!
