Smash tacos get a Caesar-style upgrade with this quick, protein-packed weeknight meal. We’re talking juicy chicken mince spread onto high-protein tortillas, seasoned simply with Cattle Call, crisped up in a skillet, and topped with crunchy cos, parmesan, and our house-made Caesar dressing. Big flavour, no stress.
Ingredients
Makes 6–8 tacos
-
500g chicken mince
-
6–8 small high protein tortillas - we love Simson’s Pantry High Protein Low Carb Street Tacos
-
Cattle Call rub, to season
-
1 small cos (romaine) lettuce, shredded
-
½ cup shaved or grated parmesan
-
½ cup Feedlot Caesar Dressing
-
Olive oil or spray for the pan
-
Optional: lemon wedges
Instructions
-
Smash and season
Lay out your tortillas and press a thin layer of plain chicken mince directly onto one side of each, spreading it to the edges.
Sprinkle a light, even dusting of Cattle Call rub over the meat side. -
Cook
Heat a non-stick or cast iron skillet over medium-high and lightly oil it.
Place each tortilla meat-side-down in the pan and smash gently with a spatula. Cook 3–4 minutes until golden and cooked through. Flip and cook the tortilla side for 30–60 seconds until lightly toasted. -
Assemble
Remove from the pan and top the meat side with cos lettuce, parmesan, and a generous drizzle of Feedlot Caesar dressing. Fold and serve hot.
