Homemade Worcestershire Sauce

Description:  Who doesn't love a good umami blast in soups, stews, chilli and burger mince? This homemade worcestershire sauce recipe is not only easy but deep in flavour, affordable and fun to make! 

 
Ingredients:
  • 4L brown vinegar
  • 1 garlic bulb whole
  • 1 tsp allspice
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 2 cups treacle
  • 440g plum jam
  • 1 chilli powder to taste
    Method:
    1. In a medium size sauce pan over medium high heat, bring to a boil and lower heat simmering for 60 minutes.
    2. Allow to cool and put in a container of your choice.  
    3. Refrigerate. 
    Serving Size:
    • Yields roughly 750ml.
    Hot Tip:  This is a vegetarian and gluten free friendly recipe.  If you want to get more traditional, try tossing one to two whole anchovies into the pot.  Be sure to strain through a fine sieve to get any bones out.  And if you want to go one step further, get yourself a small bourbon barrel and try fermenting for 12-15 monts to get an even deeper and richer flavour!
