Description: Borracho beans (also known as 'drunken beans') are a flavorful Mexican dish made with pinto beans cooked in a savoury broth of beer, onions, garlic, and spices. The beer adds depth and richness, making these beans a perfect side dish for any fiesta or BBQ!
Ingredients:
- 1lb (500g) dried pinto beans
- 1 smoked ham hock
- 4 cups of low sodium chicken stock
- 1 can of Mexican style beer (light or dark)
- 4 TBSP The Feedlot Mexicue (or to taste)
- 1 can crushed tomatoes
- 2 fresh sliced jalapeños
- 10 smashed or diced fresh garlic cloves
- 1 white or brown onion diced
- 1 cup finely chopped cilantro
- 1 cup crumbled feta or queso fresco
- Thoroughly rinse the beans and soak in water for 6-8 hours.
- Combine all ingredients in a slow cooker or a large pot.
- Cook on a low heat for roughly 8 hours or until the beans are tender to your liking.
- Pull the ham hock and remove any bones, tendons, skin, etc. Shred and/or chop the meat into bite size chunks. Return to beans and stir.
- Serve in a cup topped with crumbled feta and cilantro.
