Quick and Easy Pizza Crust Recipe:
Ingredients:
- 1 (.25 ounce) package active dry yeast
- 1 teaspoon white sugar
- 1 cup warm water (110 degrees F/45 degrees C)
- 2 1/2 cups 00 bread flour
- 2 tablespoons olive oil
- 1 teaspoon salt
Instructions:
- In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
- Stir in flour, salt, and oil. Beat until smooth but not sticky. Let rest for 5-10 minutes.
- Turn dough out onto a lightly floured surface and pat or roll into a size that you're happy with. We like ours a little irregular. Transfer crust to a baker's peel dusted with cornmeal.
BBQ Chicken Pizza Toppings:
- Equal parts Ranch Hand BBQ Sauce and your favourite pizza sauce
- 2 cups smoked chicken breast, shredded
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh coriander, chopped
Instructions for Pizza:
- Preheat your Weber kettle grill for indirect cooking over charcoal. Place a pizza stone on the grill grate and allow it to warm up with the grill.
- Prepare the pizza crust using the quick and easy pizza crust recipe above.
- Mix Ranch Hand BBQ Sauce and pizza sauce together, then spread evenly over the pizza crust.
- Top with shredded smoked chicken, mozzarella cheese, red onion slices, and chopped cilantro.
- Carefully transfer the assembled pizza onto the preheated pizza stone on the Weber kettle grill. Don't forget the cornmeal to help it slide.
- Cover the grill and cook the pizza for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Remove the pizza from the grill using a pizza peel or large spatula. Allow it to cool for a few minutes before slicing.
